Strawberry Oatmeal Squares
Strawberry Oatmeal Squares
1 ½ C Flour
1 ½ C Oats (quick cooking)
2/3 C Sugar
½ tsp Baking powder
¼ tsp salt
½ tsp cinnamon
¾ C vegan Margarine melted
1 vegan egg replacer
2 tsp Vanilla extract
1 14oz jar Strawberry preserves (or any other fruit you’d like!)
½ Coconut flaked
- Mix all dry ingredients (except coconut) together in large bowl (bowl 1)
- Add margarine & vanilla, stir
- set aside 1 ½ – 2 Cups (into bowl 2)
- Add egg replacer to bowl 1
- press mixture from bowl into baking pan
- spread preserves over crust
- Add coconut to mixture that you set aside (bowl 2)
- sprinkle over preserves
- Bake at 350 for 40 mins

Well, after 5 hours of mixing, baking, waiting, heating, stirring, coating, waiting…. I’d say these cookies are good. Not great, not bad, but good. Would I happily eat and enjoy them – yes! Would I spend the time and effort to make them a second time – definitely not!
Vegan Coconut Cake with Strawberry frosting
Vegan Coconut cake
¾ C Sugar
2 ¼ C Flour
1 tsp Baking powder
1 ½ non-dairy milk (I used Almond)
¼ C + 1 Tb melted vegan margarine (I use Earth Balance)
1 tsp vanilla
½ C Shredded coconut
Preheat oven to 350
Mix together: Sugar, flour, baking powder
Add in: Milk, margarine and vanilla while stirring
Fold in coconut
Vegan Strawberry frosting
1 C frozen or fresh strawberry
1 T water
2 C Powered Sugar
2T margarine
In a small pan, bring strawberries & water to a simmer. Cook for about 10 mins. Place in food processer with sugar and margarine…. Blend!
Vegan Popcorn Balls
Vegan Popcorn Balls
1 large bowl filled with popped popcorn
1/3 Cup Agave Syrup
1 TB vegan margarine (Earth Balance)
2 Tb cold water
1 Cup Powdered Sugar
½- 1 Cup Vegan marshmallows
- In a saucepan over med-low heat mix together all the ingredients (expect popcorn). Sir continuously until mostly smooth.
- Pour mixture over popcorn and mix evenly
- Wait until mostly cool and then shape into balls.
