{"id":427,"date":"2015-08-13T12:15:46","date_gmt":"2015-08-13T16:15:46","guid":{"rendered":"http:\/\/vegangoodness.com\/?p=427"},"modified":"2015-08-13T12:17:05","modified_gmt":"2015-08-13T16:17:05","slug":"summer-baked-lentil-burgers","status":"publish","type":"post","link":"https:\/\/vegangoodness.com\/?p=427","title":{"rendered":"Summer Baked Lentil Burgers"},"content":{"rendered":"<p><strong>Summer Lentil Burgers<\/strong><\/p>\n<p>8-10 burgers<\/p>\n<ul>\n<li>1 cup <a href=\"http:\/\/www.food.com\/about\/lentil-258\">dry lentils<\/a>, well rinsed<\/li>\n<li>2 <sup>1<\/sup>\/<sub>2<\/sub> cups <a href=\"http:\/\/www.food.com\/about\/water-459\">water<\/a> \u2013 may need to add more if needed<\/li>\n<li><sup>1<\/sup>\/<sub>2<\/sub> medium <a href=\"http:\/\/www.food.com\/about\/onion-148\">onion<\/a>, diced (or onion powder in a pinch)<\/li>\n<li>1 red pepper diced<\/li>\n<li>1 fresh ear of corn- cut off kernels (or some frozen)<\/li>\n<li>Handful of spinach, kale or other green<\/li>\n<li>1 cup (apx) of flour (can be reg or gluten free)<\/li>\n<li><sup>1<\/sup>\/<sub>2<\/sub> teaspoon <a href=\"http:\/\/www.food.com\/about\/salt-359\">salt<\/a><\/li>\n<li>1 tablespoon <a href=\"http:\/\/www.food.com\/about\/olive-oil-495\">olive oil<\/a><\/li>\n<li><sup>1<\/sup>\/<sub>2<\/sub> teaspoon <a href=\"http:\/\/www.food.com\/about\/salt-359\">salt<\/a><\/li>\n<li>1 tablespoon <a href=\"http:\/\/www.food.com\/about\/olive-oil-495\">olive oil<\/a><\/li>\n<li>\u00bd tsp Garlic powder<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<p><strong>Directions<\/strong><\/p>\n<ol>\n<li>Boil lentils in the water with the salt for around 45 minutes. Lentils will be soft and most of the water will be gone. Add more water id lentils aren\u2019t mushy yet and you need to continue cooking<\/li>\n<li>Once lentils are mushy \u2013 throw in fresh veggies and cook for 3-5 mins.<\/li>\n<li>In a bowl mix the cooked ingredients with flour, and any spices (spices are apx.
