Cover and let rest for 10 minutes. \u00a0Roll out into sheets (or use hand crank pasta machine \u2013 Pull off small chuck (about 1\/8<sup>th<\/sup> of ball) flour well and run through on 1<sup>st <\/sup>\/largest setting, re-flour, fold into thirds and run through the 2<sup>nd<\/sup> setting, repeat until the desired thickness \u2013 we use #5 on our machine) <em>if it\u2019s too thin then the fillings seems to seep out.<\/em> \u00a0Once in strip and desired thickness, cut into squares, fill with pumpkin filling and fold, be sure to press together edges well so filling doesn\u2019t escape.\u00a0 Place on flat floured surface until ready to cook \u2013 DO NOT stack on top of each other or they will stick and rip. \u00a0\u00a0Once ready to cook, place 5 or 6 raviolis into boiling water. Wait until raviolis start to float (about 30 secs) and take out of water with slotted spoon.<\/p>\n<p align=\"center\"><strong>Filling:<\/strong><\/p>\n<ul>\n<li>1 large Carrots<\/li>\n<li>1 small onion<\/li>\n<li>1 cloves garlic, minced<\/li>\n<li>1 Tbs vegan margarine or oil<\/li>\n<li>1 16 oz can pureed pumpkin<\/li>\n<li>Salt &amp; pepper to taste<\/li>\n<li>1tsp coriander<\/li>\n<li>1 tsp allspice<\/li>\n<li>1 Tbs Maple syrup<\/li>\n<\/ul>\n<p>In a medium pot, cook carrot, onion, garlic, salt, pepper coriander and allspice\u00a0 in margarine until soft.\u00a0 Then, add pumpkin puree and maple syrup.\u00a0 Cook on low heat for a few minutes or until ready to use.<\/p>\n<p align=\"center\"><strong><span style=\"text-decoration: underline;\">Sauce:<\/span><\/strong><\/p>\n<ul>\n<li>2 Cups Soy Milk<\/li>\n<li>1 Cup toasted, chopped hazelnuts<\/li>\n<li>3 cloves garlic, minced<\/li>\n<li>Dash white pepper<\/li>\n<li>Dash cayenne pepper<\/li>\n<\/ul>\n<p>Combine all ingredients in small pan and bring to a boil.\u00a0 Lower heat and simmer for 10 mins.\u00a0 Transfer to food processer or blender and blend until smooth.\u00a0 Return to pan and keep warm on med-low heat.\u00a0 If not thick enough bring back to a boil until thickened.<\/p>\n<p>&nbsp;<\/p>\n<p>Also &#8211; These are seriously DELICIOUS!!!!!<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Home-made Pumpkin Ravioli with Hazelnut Cream Sauce Pasta: 2 Cups Flour 2\/3 Cup Water \u00bd tsp salt 1 T olive oil Mix all ingredients together until dough comes together in a ball.\u00a0 Kneed on floured surface until smooth.
