<\/strong><\/p>\n<p align=\"center\"><strong><a href=\"https:\/\/vegangoodness.com\/wp-content\/uploads\/2012\/02\/IMG_0065-Small.jpg\"><img decoding=\"async\" loading=\"lazy\" class=\"alignnone size-medium wp-image-210\" title=\"IMG_0065 (Small)\" src=\"https:\/\/vegangoodness.com\/wp-content\/uploads\/2012\/02\/IMG_0065-Small-300x200.jpg\" alt=\"\" width=\"300\" height=\"200\" srcset=\"https:\/\/vegangoodness.com\/wp-content\/uploads\/2012\/02\/IMG_0065-Small-300x200.jpg 300w, https:\/\/vegangoodness.com\/wp-content\/uploads\/2012\/02\/IMG_0065-Small.jpg 720w\" sizes=\"(max-width: 300px) 100vw, 300px\" \/><\/a>\u00a0<a href=\"https:\/\/vegangoodness.com\/wp-content\/uploads\/2012\/02\/IMG_0068-Small.jpg\"><img decoding=\"async\" loading=\"lazy\" class=\"alignnone size-medium wp-image-211\" title=\"IMG_0068 (Small)\" src=\"https:\/\/vegangoodness.com\/wp-content\/uploads\/2012\/02\/IMG_0068-Small-300x200.jpg\" alt=\"\" width=\"300\" height=\"200\" srcset=\"https:\/\/vegangoodness.com\/wp-content\/uploads\/2012\/02\/IMG_0068-Small-300x200.jpg 300w, https:\/\/vegangoodness.com\/wp-content\/uploads\/2012\/02\/IMG_0068-Small.jpg 720w\" sizes=\"(max-width: 300px) 100vw, 300px\" \/><\/a><\/strong><\/p>\n<p>2 large zucchini, cut in cubes or \u00bd circles<\/p>\n<p>2 medium yellow squashes, cut in cubes or \u00bd circles<\/p>\n<p>1 large potato, cut into cubes<\/p>\n<p>1 onion, chopped<\/p>\n<p>5 cloves of garlic, crushed<\/p>\n<p>1 pepper (green or red..) chopped<\/p>\n<p>Green beans, fresh or frozen work<\/p>\n<p>Olive oil, enough to cook with<\/p>\n<p>Fresh basil (the more the better!)<\/p>\n<p>Lima beans (optional ) or Chick peas (optional) or neither!<\/p>\n<p>1 large can of Diced Tomatoes (or 1 lb of fresh tomatoes chopped \u2013 if you have enough in the garden)<\/p>\n<p>Any other vegetables that are fresh or you love \u2013 for instance, if you have some fresh sugar snap peas, spinach, eggplant etc. add them in!<\/p>\n<p>&nbsp;<\/p>\n<p>&#8211;\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Add all vegetables (except tomatoes) in a large pan with olive oil.\u00a0 Cover &amp; cook on medium-low for about 20-30 minutes \u2013 until vegetables are soft looking<\/p>\n<p>&#8211;\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Add in tomatoes (and basil if you haven\u2019t already) season with salt &amp; pepper to taste<\/p>\n<p>&#8211;\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Cover and simmer for another 30 minutes \u2013 the longer the better the flavors simmer together..<\/p>\n<p>&#8211;\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Serve in a bowl with fresh bread to dip!\u00a0 YUMMMM!<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Ciambotta (pronounced Jum-buta) This is an Italian squash stew that has been one of my favorite childhood &amp; adult recipes \u2013 passed down from generation to generation it changes and is easily adaptable to likes\/dislikes and freshness of vegetables. \u00a0That said, these vegetables and amounts are more like loose guidelines than an exact measurements!
